Chia Coconut Pudding

200ml coconut milk
1 tbsp maple syrup or agave
4 tbsp true chia seeds
Fresh fruit

Method:

  1. In a large bowl, mix together the coconut milk, maple syrup and chia seeds.
  2. Chill in the fridge and allow the mixture to set overnight.
  3. When removed from the fridge, stir well. The mixture should be thick and the chia seeds should have gelled.
  4. Serve with fresh fruit of your choice.

Serves 2-4 depending on portion size.
