Coconut Walnut Spirulina Energy Bites

10 IIHF medjool dates, pitted
1 cup IIHF walnuts, broken into pieces
½ – 1 tsp true spirulina powder
½ cup shelled hemp seeds
¼ cup desiccated coconut plus ¼ cup for coating

Method:

  1. Place walnuts, dates, hemp seeds, spirulina and ¼ cup of coconut into a food processor. Mix until it becomes sticky and starts to form a ball (around 2 minutes).
  2. Remove the dough from the food processor and form balls the size of a 50-cent piece.
  3. Roll the balls into the remaining coconut to coat them. Serve immediately or refrigerate in an airtight container for up to 5 days.
