Green Energy Bars

1 cup IIHF cashew nuts
1 cup IIHF pitted medjool dates (about 8 large dates)

1-2 tsp true wheatgrass powder

¼ cup shelled hemp seeds

¼ cup of true goji berries (optional)

Method:

  1. Mix the cashews, dates and wheatgrass powder together in a food processor until a rough dough has formed (allowing some cashews to remain coarsely chopped).
  2. Add the hemp seeds and pulse several times until combined. Also add the goji berries at this point, if using.
  3. Place a sheet of cling film on a cutting board and tip the dough out of the food processor onto it. Use your hands to press and form into a 1-inch-thick rectangle, then cut into 8 pieces.
  4. Wrap and keep in the fridge for 5 days or in the freezer for long-term storage.
